Mango Chicken

Mango Chicken

2 tsp olive oil
4 - 4oz boneless skinless chicken breasts
1/4 tsp sea salt
1/4 tsp ground black pepper
2 mangos, peeled and diced
1 green bell pepper, chopped  (I used more than half a pepper)
1 c low sodium chicken broth
2 green onions, chopped
2 Tbsp chopped fresh mint
1 Tbsp fresh lime juice
1 tsp lime zest (I didn't measure, but I'm sure it was less.. I zested one lime)
1 tsp finely chopped garlic
2 c cooked brown rice  (I used one of the microwave packages)

NOTE:  The rice gets added at the end, and needs to already be cooked at that point.

In large skillet, heat oil to medium high.  Season both sides of chicken, add to skillet, and cook for 2 minutes per side, until golden brown.

Add everything else except rice.  Bring to a simmer, and reduce heat to medium.  Partially cover, and cook for 5-6 minutes until chicken is cooked through.  Add rice to skillet and stir to combine.  Cook for 1 minute to heat through.
