Herbed Artichoke Chicken
1 1/2 pounds boneless, skinless chicken breasts
1 can (14 oz) diced tomatoes, drained
1 can (14 oz) artichoke hearts in water, drained
1 small yellow onion, chopped
1 c fat free sodium free chicken broth
1/2 c kalamata olives, pitted and sliced
1/4 dry white wine
3 T quick-cooking tapioca
1 T chopped parsley
2 t curry powder
1 t dried basil
1 t dried thyme
1/2 t salt
1/2 t black pepper
Combine all in crockpot. Cook on low 6-8 ours, or high 3-4 hours, or until chicken is cooked through.
